Cake Pops!

I am so excited to have discovered cake pops.  Although I wish I had been smart enough to come up with them I am content to make and eat them.  A lot of them.

There are SO many cute ways to decorate them too!  I read recently in a blog that someone used them instead of a wedding cake, how smart!  I am jealous I did not have this idea as well.

Wednesday afternoon I had the privilege of watching a lady from my church decorate a cake!  Her name is Anna, and she makes THE cutest cakes for friends, family, and people from church.  Her cake-making started out just for family, but lately, she has been selling a ton of them!  What a fun way to make a little extra money.  I don't know how she does it with 3 kids under the age of 5 o_o.

Very impressive.  After learning so much from her, I REALLY had the itch to make a cake.


Thursday I decided to cave to my cake-baking-craving.  So in between washing clothes (thanks Phil and Ang!) , I baked a funfetti cake, and whipped up some buttercream frosting.   Finally, at around 4pm, I was done washing and began my cake decorating journey.
Unfortunately, I was a liiiittle too confident in my skills.  Lets just say I definitely do not know how to make a professional looking cake.

Problem(s)
1. I decided to dirty-ice (the first layer of icing, to make sure none of the crumbies will be on the final icing) with funfetti frosting.  It's a really delicious frosting, just not at all what you should use to dirty ice.  It's very heavy and gloppy and chunky because of all the rainbow chips in it.  I do not know what I was thinking.
2. Who tries to make a 9 by 13 in. cake into 4-tiered asymmetrical cake with no prior experience in making a 4-tiered or asymmetrical cake, this girl.  Enough said.
3. Funfetti cake, a cup of pudding in the mix!  A wonderful addition, unless you are trying to chop it up and not have it be sticky.  And falling apart in sticky chunks.
4. Arizona. I really do love the weather here. But the 90 degree heat does not help the whole melty, gloppy frosting situation.  I do not turn on the A/C.  I will not.  (Except when Dave gets home, he is a much bigger temperature baby).
So, after all my work and anticipation, my 4-tiered, asymmetrical cake became crumbs and blobs and a one tiered squared cake with WAY too much frosting.  No pictures taken.  It was just too embarrassing.  I may have been mildly depressed.

But then, I remembered Cake Pops! Crisis averted! I threw the rest of the three tiers, frosting and all into a bowl and mushed it up good.  Then I rolled that sugary goop into (kinda chunky) balls and let them cool in the freezer for a bit. (I am too impatient to wait for 2 whole hours in the fridge!)  Once they were cooled enough, I stabbed them with skewers and dipped them into white chocolate.  I'm not the biggest fan of white chocolate, but my thought was that if I used it, I might not eat as many cake pops.  Silly, I know.  May I say, they are delicious.  Even with white chocolate.  But, if I eat more than two I feel really sick haha.

Hahaha.  I can't even handle it.

Day 2 of blogging complete!  I can't say I am impressed with my writing quality,  but practice makes perfect right?

  1. ahhhhhhhhhhh! courtney i love it! i was smiling the whole time. i love that you did funfetti and rainbow chip. river falls classic! :) i'm excited to try those cake pops at kaylas grad party. or maybe i'll end up making them before. i dont know. they just sound way too yummy! :)

  2. haha my theory is, it may not always look the best, but as long as it tastes great you're good! I'm sure you won't have problems with melting frosting in Alaska...maybe you can perfect your cake decorating abilities there. :)
